Vegan Peanut Butter Chocolate Chip Cookies


I haven’t shared anything for a while now so I will be generous and treat you to one of my favourite recipe’s ever, my Vegan Peanut Butter Chocolate Chip Cookies! I know, they’ve been done a million times before, I’m sure you’ve all made a version of these yourselves a time or two but throw out your old recipes and try this one because it is the best! It is my own and I am biased but I still stick to the fact that this is the best peanut butter, chocolate chip biscuit recipe out there!

Ingredients:
¾ cup crunchy peanut butter
¾ cup brown sugar
1 tsp. bicarbonate of soda
Equivalent of 1 egg, using egg replacement powder
Chocolate chips (I use around half a bag of Sweet Williams, or ¾ cup)
Plain flour

  • Preheat oven to 200°C and line two trays with baking paper.
  • In a large bowl combine peanut butter, sugar, bicarb soda and egg replacement mixture and mix well. Add chocolate chips and slowly add plain flour until mixture is only just still sticky to fingers. The flour makes a big difference in texture so make sure you don’t add too much.
  • Roll teaspoon-fulls of the dough into balls and press lightly onto the trays.
  • Bake for 8 – 10 minutes or until lightly golden. Leave to cool and harden on trays. Enjoy!
