This is a delicious cruelty free breakfast option. It’s great served on toast with tomato sauce, or with veggie sausages, beans and hash browns for an indulgent cooked breakfast or brunch.
Here we’ve served it on a toasted English muffin with a grilled portobello mushroom and tomato wedges.
Ingredients:
- 200g tofu, crumbled
- 2 spring onions, finely sliced
- 2tsp tamari
- 2tsp savoury yeast flakes (nutritional yeast)
- 1/2tsp turmeric
- 2-3tbsp water
- Chopped fresh parsley and/or chives to garnish
- Freshly ground pepper
- Olive oil, for frying
Directions:
- Heat a little olive oil in a frying pan. Fry onion and tofu for a minute or two.
- Add tamari, yeast flakes, turmeric and water to pan and fry for a further minute.
- Remove from heat and stir through the fresh herbs. Add cracked black pepper to taste.
Thanks so much for all the efforts your passion just boils over into the net. i have just been diagnosed with Osteo and my diet needs loads of calicum so this is just up my alley breakfast is always a hard one to change up. however you didn’t mention the type of tofu and i am quite new to eating and preparing it does it matter ??? i have a great ganache recipe that i sourced from the net which i would love to share as it is awesome and if you like chocolate you will flip over this one.
227gms of bittersweet chocolate
1 cup of soy or any milk of choice
‘1/2 vanilla bean scraped
285gm of Silken Tofu,drained
chop up chocolate intoa bowl
in saucepan combine soy or?? and scraped vanilla bean
bring to boil then pour over chocolate stand for 1 min.
remove vanilla bean and whisk until smooth
in blender process drained tofu until creamy approx 10sec add ganache mix blend again until smooth 20-30sec
put into individual bowls or like me one big bowl and set in fridge for 1 hour and YUM
